The Harvest
Macerations are relatively short – we are aiming to produce wines that are enjoyable when young, although with enough body to age …gracefully. After the malolactic fermentations, we leave the young wines to mature in the same oak casks and cement vats that they were made in, until bottling – which will be the spring for the Cuvée de Printemps, and just before the vendanges for the other two Cuvées.
