We harvest entirely by hand – which enables us to be selective in the grapes that we pick right from the outset. Having a team of pickers who return each year and who understand our philosophy enables us to pick each plot of grapes exactly when we want to, rather than being dependent on when the harvesting machine is available. Picking, typically, begins in mid-September and is spread out over two to three weeks as we wait for the right moment.
